A Simple Substitution

When I’m craving something hearty after a long rehearsal, but I don’t have much time to cook, I turn to my 10-minute quick fix—the scrambled egg. It’s an old stand-by, but recently I’ve been giving it a new spin using Omega-3-enhanced eggs, which I discovered in the dairy section of Whole Foods. OK, they’re a few cents more expensive than the regular kind, but the boost of essential fatty acids—which fight fatigue and keep your memory sharp—is worth the extra pennies. Vegetarians, take special note: this is a great way to stock up on nutrients you lose by not eating fish, one of the richest natural sources of Omega-3’s.
